Mexicali Fajitas

Give your fajitas a little extra ¡Olé! with our Southwestern Style Chicken Patties.

Ingredients (Makes 2 – 3 Servings)

  • 2 Southwestern Style Marathon Chicken Patties®
  • 2 Bell Peppers (Any Color) – Stemmed, Quartered and Sliced into 1/2 Inch Strips
  • 1 Medium Onion (Red or Yellow) – Quartered and Sliced into 1/2 Inch Strips
  • 1 Jalapeno – Stemmed and Sliced into 1/2 Inch Strips
  • 1 Lime
  • 1 1/2 Tablespoon Olive Oil
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Garlic Powder

Preparation

  1. Mix chili powder, cumin, salt, paprika and garlic powder in a small prep bowl.
  2. Place sliced bell peppers, onion and jalapeno in a medium bowl. Add 1 tablespoon of extra virgin olive oil, spices, the juice of 1 lime, and mix thoroughly.
  3. Heat 1/2 tablespoon of olive oil in a large non-stick pan over medium-high heat. Once hot, cook two frozen Southwestern Style Marathon Chicken Patties over medium heat for 5 minutes. Flip Chicken Patties and cook for another 5 minutes.
  4. Remove Chicken Patties from the pan and place on a cutting board. Add marinated peppers and onions to the pan and sauté for 3 to 4 minutes until tender. While peppers and onions cook, warm tortillas.
  5. Slice or cube the Chicken Patties and return to the pan. Cook together with the peppers and onions for 1 minute.
  6. Serve fajitas and garnish with your favorite hot sauce, pico de gallo or guacamole.
